crawfish

I called them "crawdaddies" when I was a boy, and I never ate one. I CAUGHT a lot of them in the canals around where I lived, but that was just sport, not for food.

But--- things changed. I met some Cajun fuckers who cooked crawfish the way we do shrimp around Savannah--- in a big tub, outside, over an open fire. They dump the finished product on a table paved with old newspapers and you dig in.

Crawfish is a lot like a shrimp, only different. Unique taste and very good. And YES!!!! I suck the heads.

I can eat those things until my gut explodes.

Hell, I still call them crawdads! Years ago I had a good bud with a brother that lived in Baton Rouge and when we went to visit, they showed me how to eat them like that. Dump a number three washtub of um on a big table with a keg of beer and get after um! Just throw the shells over your back and clean that up later.

I still call them crawdads too, when I was stationed in Pensacola, we used to buy a 20 pound sack of cooked crawdads, take them back to the hotel room, spread news paper all over the center of the floor and go to town. Washing them down with beer, now those were the days...

Amen A-man! The first time I tried it was just like you. They were cooked up by a self-admitted coon-ass from southern Louisiana and I ate till I couldn't move. Didn't even make much of a dent in that pile either.

Damn good eatin' when they're done right! Oh, and IMHO, you ain't had crawfish unless you suck the head! No sense in wasting anything!

we always called them crawdads too. My brother and I would go to the creek and catch a mess of them and boil 'em up too. They're very tasty but it's a lot like work to get full on the little bastards. I'd rather eat crabs myself if I'm going to go to that much trouble for a crustacean meal.
